INDIAN PUDDING | |
2 c. boiling water 3/4 c. white cornmeal 1 (15 oz.) can sweetened condensed milk 1/4 c. molasses 1 c. cold water 1/2 tsp. salt 1/4 c. butter, melted 2 lg. eggs, slightly beaten 1 tsp. vanilla extract 1 tbsp. cinnamon 1 c. raisins Pour boiling water into large mixing bowl. Sprinkle cornmeal over surface of water, stirring constantly until all the water is absorbed. Blend in milk, molasses, cold water, salt and butter. Slowly stir hot mixture into eggs. Add cinnamon, vanilla and raisins, mix well. Pour into buttered 2-quart casserole. Bake in a 350 degree oven, about 1 1/2 hours until a knife inserted in the center of pudding comes out clean. Serve warm with cream, whipped cream or ice cream, if desired. |
