APRICOT BARS 
3/4 c. butter
1 c. sugar
1 egg
1 tsp. vanilla
1/4 tsp. baking powder
2 c. flour
1 1/3 c. shredded coconut
1/2 c. chopped walnuts
1 (12 oz.) jar apricot preserves

Cream butter. Add sugar and egg. Mix well. In separate bowl combine baking powder and flour. Gradually add cream butter mix, coconut, walnuts and vanilla; mix well.

Press 2/3 of dough in 9 x 13 x 2 inch pan. Spread preserves over dough. Crumble rest of dough over top of preserves. Bake at 350 degrees for 30-35 minutes until golden brown. Cool. Cut into squares. Yield 36 bars.
