CREAM WAFERS 
1 c. soft butter
1/3 c. whipping cream
2 c. all purpose flour (do not use self rising flour)
Granulated sugar

CREAM FILLING:

1/4 c. soft butter
3/4 c. powdered sugar
1 tsp. vanilla
Food coloring

Mix thoroughly butter, cream and flour. Cover and chill. Roll about 1/3 of dough at a time 1/8" thick on floured cloth covered board. Keep remaining dough refrigerated until ready to roll. Cut into 1 1/2" circles. Transfer circles or rounds with a spatula to piece of waxed paper that is heavily covered with granulated sugar. Turn each round or circle so that both sides are coated with sugar.

Place on ungreased baking sheet. Prick circles with a fork 3 or 4 times. Bake 7 to 9 minutes at 375 degrees or just until set but not brown. Mix the cream filling by creaming the butter. Add the powdered sugar and vanilla and cream until smooth and fluffy. Tint with food coloring. Put the cookies together with the cream filling. I always double the cream filling for 1 batch of wafers.
