CHINESE HAMBURGER HASH 
2 tbsp. shortening
2 sm. onions, chopped fine
1 c. celery, chopped fine
1 can Chinese vegetables, drained
1 lb. ground beef
1 can celery soup
1 can mushroom soup
1/4 c. low salt soy sauce
1/4 tsp. pepper
1/2 c. uncooked rice (not instant)
1 can Chinese noodles

Melt shortening in pan; brown onions and celery until golden. Add ground beef and cook until redness is gone. Put rest of ingredients, except noodles, in bowl and mix well, add meat mixture. Put in casserole. Bake, covered, 30 minutes at 350 degrees. Uncover and bake 1 hour. Sprinkle noodles on top and bake 15 minutes more. Serves 6.
