CHEESE ENCHILADAS 
1/2 lb. grated cheese
1/2 c. finely chopped onion

SAUCE:

1 tbsp. cooking oil
2 tbsp. flour
1 tbsp. red chile powder
1 lg. can Las Palmas Enchilada sauce

Have cheese and onion in separate bowls. Brown flour in oil and add rest of sauce ingredients. Fry tortilla in hot oil; dip in hot sauce and fill with cheese and onion; roll. Use shallow pan, pour remaining sauce over tortilla and garnish with cheese and black olives. Follow these directions for each enchilada.
