BAKED CARROTS A LA RUTH EDGE 
Approximately 9 (for 4 servings) carrots
1/2 c. mayonnaise
1/4 c. carrot broth
2 tbsp. horseradish
2 tbsp. grated onion
Salt and pepper

Remove skin and cut carrots in thin slices. Boil for 10 minutes, maximum. Save 1/4 cup of broth. Combine above ingredients and pour over carrots in baking dish. Top with 1/2-3/4 cups bread crumbs which have been browned in 2-3 tablespoons butter. Shake on a dash of paprika and bake 15 minutes in 375 degree oven.
