FROG'S ZUCCHINI BREAD 
2 cups self-rising flour
2 cups sugar
2 cups grated zucchini (without peeling)
1 cup vegetable oil
1/2 cup brown sugar
3 eggs
1 cup chopped pecans or walnuts
1 or 2 tsp. cinnamon
1 tsp. vanilla

Grease pans. Mix all ingredients together and bake at 350°F for about 50 minutes. When bread is removed from oven, wrap in aluminum foil or cover with a towel to hold in moisture.

Enjoy!!!

Makes 2 bread loaves.

I have made this recipe numerous times and it always falls. My family says the flavor is Spot-on do not change anything Why do you think it always falls? I have used Teflon lined and metal pans both Do you think I should use glass pans??

Try adding a few tablespoons of flour to get the batter consistency right. Too thin and it will fall, too thick and it will be dry. I followed the recipe and realized that my batter was too thin and added maybe 4 tablespoons of flour.

My family LOVES this recipe! I enjoy making Zucchini bread and have used many different recipes. This seems to be the family favorite. Once in a while I will try another recipe, but again, I have to come back to this one. Really really good!
