ZUCCHINI/SAUSAGE DISH 
Bake 1 pound Italian hot or sweet sausage in spaghetti sauce in a covered (with foil) pan for 1 - 1 1/2 hours at 325°F. When cool, slice sausage. Put aside.

Peel and dice zucchini; dice green pepper.

Sauté in olive oil, 4 cloves garlic and chopped Mushrooms (canned or fresh).

SEASONINGS:

oregano
salt and pepper
garlic powder
crushed red pepper

Add zucchini chunks and diced green pepper to onions and garlic. Cover and stir frequently until tender (approximately 1/2 hour).

Add spaghetti sauce (approximately 1 - 1 1/2 cups) to the pan and continue to cook. Add sliced sausage and cook another 10-15 minutes.

This is excellent served over linquine, wide egg noodles or rice..
