ZUCCHINI HOT DISH 
3 c. zucchini, thinly sliced
1 lg. onion, chopped
1 1/2 lbs. ground beef
1/2 tsp. salt
1 (6 oz.) pkg. stuffing mix
1 c. grated carrots
1 can cream of chicken soup
1 c. sour cream

Cook zucchini and onion for 5 minutes in salted water; drain. Brown meat, season with salt and pepper. Prepare stuffing mix according to directions. Spread half of meat in bottom of greased 2 quart casserole dish. Top with half of stuffing mix. Combine carrots, soup and sour cream, fold zucchini and onions into mixture. Pour over stuffing mix. Add rest of meat and stuffing mix. Bake 45 to 50 minutes at 350 degrees.
