MINI BLINIS 
2 loaves Pepperidge Farm white bread
1 lb. cream cheese
1 egg
1 tsp. vanilla
1/2 c. sugar
1/2 lb. butter, melted
Sugar & cinnamon mixed for topping

Remove crusts from bread and roll out thinly, about 4 slices at a time. Cream cheese, egg, vanilla and sugar until smooth; spread on bread. Roll up like jelly roll. Dip in melted butter. Cut in half. Stack on tray and freeze. When ready to serve, sprinkle with cinnamon and sugar. Bake at 400 degrees for 18 to 20 minutes. Serve hot.
