MINI BLINIES 
24 slices white bread
8 oz. cream cheese, softened
2 egg yolks
1/2 c. sugar
1/2 c. butter, melted
1 tsp. cinnamon mixed with 1/2 tsp. sugar

Trim crust from bread and flatten with a rolling pin. Mix cream cheese, egg yolks and sugar. Spread cream cheese mixture onto bread and roll each slice like a jelly roll. Dip in melted butter and roll in mixture of cinnamon and sugar. Place on cookie sheet and freeze. When frozen, cut rolled slices into thirds. Store in freezer. No need to thaw before baking. Bake at 350 degrees for 10 minutes.

The recipes for mini 'blini' which require a loaf of bread (!!) have absolutely NOTHING to do with the bliny. Bliny are Russian (and also Eastern European) french style crepes, basically thin pancakes. Batter is similar to American style pancakes, but is thinner. One can use a ready pancake mix or a pancake recipe and add more liquid (add milk to your own pancake recipe; add water or milk to a boxed pancake mix). You can serve it by laying a cooked pancake flat, spreading your stuffing (either 1 of these: caviar, sour cream, smoked salmon, or jelly, or condensed milk). Fold, enjoy.

It was difficult to dip the mini blinis in the melted butter and then roll them in the cinnamon and sugar mixture. The blini absorbed too much butter and then the cinnamon and sugar mixture became lumpy. What I wound up doing was brush each blini with butter using a pastry brush and then sprinkle it with the cinnamon mixture. I turned each one and repeated the process. VOILA It was a success. Yum! Yum!
