ITALIAN STYLE MINI MEAT LOAF 
1/2 egg, beaten
1/4 c. soft bread crumbs
2 tbsp. tomato juice
2 tsp. parsley
1/8 tsp. oregano
1/2 tsp. salt
Few grains pepper
1/4 tsp. fresh garlic
1/2 lb. lean ground beef
2 thin slices boiled ham
1/4 lb. Mozzarella cheese, grated
2 oz. sliced Mozzarella cheese

Combine eggs, bread crumbs, tomato juice and parsley, oregano, salt, pepper and garlic. Mix with beef.

On a large sheet of foil place beef mixture and flatten our to a rectangle. Arrange ham on the meat and sprinkle with grated cheese.

Starting at the short end of the meat, roll up jelly roll style using the foil to lift the edges and ends. Place the meat loaf seam side down in a loaf pan. Bake 45 minutes at 350 degrees. Just before serving, put sliced Mozzarella over top to melt slightly.
