CHEESE RAVIOLI FILLING 
3 cups ricotta
2 eggs
salt and pepper
2/3 cups finely grated Parmesan cheese
1 10oz pkg frozen spinach (or use fresh)
2 tablespoons minced fresh parsley
a pinch of freshly grated nutmeg (optional)

Dry spinach. Finely chop with parsley. Combine and thoroughly mix ingredients in mixing bowl. Add salt and pepper to taste. Use as a filling for your pasta when making ravioli.
