NEAPOLITAN BEEF 
1 c. carrots, diced
1 c. celery, diced
1/4 c. salad oil
2/3 c. onion, diced
3 cloves garlic, diced
3 lbs. ground round
Fresh mushrooms, sliced
1/2 c. wine
30 oz. can tomato sauce
30 oz. can peeled tomatoes
6 oz. sm. shell macaroni
10 oz. pkg. frozen chopped spinach
1 1/2 c. sharp Cheddar cheese, grated
Pepper
Oregano
Basil
Parsley

Saute onion, garlic, carrots and celery. Then add beef. Brown; then add mushrooms, wine, tomato sauce, peeled tomatoes and seasonings. Simmer 1 hour uncovered.

Meanwhile, cook macaroni as directed on package, then spinach. Drain each and add to casserole. Top with grated Cheddar cheese. Bake at 350 degrees for 30 minutes. Serves 8-10.
