ARTICHOKE SQUARES 
2 (6 oz.) jars marinated artichoke hearts, drained
1 bunch scallions, finely chopped
1 clove garlic, minced
4 eggs
1/4 c. bread crumbs
1/4 tsp. salt
1/8 tsp. each pepper, oregano and Tabasco
1/2 lb. sharp Cheddar cheese grated (about 2 cups)
2 tbsp. minced parsley

Saute scallions and garlic in marinade drained from 1 jar of artichoke hearts until limp. In a bowl, beat the eggs; add the crumbs and seasonings; stir in the cheese, parsley and artichokes which have been chopped; add onion mixture. Pour into a greased 7 x 11 inch baking pan. Bake at 325 degrees for about 30 minutes or until set when lightly touched. Let cool in pan, then cut into 1 inch squares. Serve cold or reheat in pan in a 325 degree oven for 10 to 12 minutes. Makes about 6 dozen.
