IMPERIAL MEAT LOAF
1 egg
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/4 cup chopped onion
1/2 cup bread crumbs
2/3 cup (8 oz. can) pork and beans, drained (reserve for glaze)
1 pound ground beef or chuck

Combine all ingredients except ground beef and mix thoroughly. Add to ground beef and mix well. Shape into a round oblong loaf and place in center of baking dish or glass pastry pan.

Prepare glaze.

GLAZE:

reserved liquid from pork and beans
1/2 cup ketchup (Hunts)
2 tablespoons brown sugar
1 onion, cut into thin circles

Combine liquid from pork and beans, ketchup and brown sugar. Cut an onion into thin circles and cover the top of the meat loaf.

Pour glaze over onions and meat so there is a thin layer over entire loaf.

Bake in 375°F oven for 35 to 45 minutes.

Makes 3-6 servings.

This can be baked in a glass or heavy casserole/baking pan at 375°F. Otherwise, bake in a loaf pan at 400°F.
