NINE POUND MEAT LOAF | |
6 lb. ground beef (cheapest blend) 3 lb. pork sausage (unseasoned) 6 eggs 1/2 lb. Ritz crackers Milk 6 tbsp. Worcestershire sauce 1 med. lg. onion 1 1/2 tsp. celery salt 1 1/2 tsp. garlic salt (optional) 1 1/2 tsp. pepper 1 1/2 tsp. sage 1 1/2 tsp. dry mustard 3/4 tsp. thyme Chop onion and blend all ingredients adding enough milk so mixing is moist but still holds shape. Place in roasting pan. Bake at 350 degrees until internal temperature is 165 degrees. Remove and let set for 5 minutes before carving. Cooking time = 2 to 2 1/2 hours. Fat should be drained after 1 hour and every 20 minutes thereafter until done. NOTE: May be divided into 2 to 4 separate loaves and frozen for future use. |
