HURRY-UP PORK CHOPS 
4 med. baking potatoes
1 lb. thinly sliced pork chops
1 med. onion, peeled and sliced
1 (8 oz.) carton dairy sour cream or plain yogurt
1 (about 1 oz.) envelope dry onion soup mix

Spray a 9x13x2 inch glass baking dish with non-stick vegetable spray. Peel and slice potatoes; slice into bottom of dish, making thin layer. (Potatoes may be partially cooked, if desired.) Top with pork chops and cover with onion slices. Bake in a preheated 350 degree oven for 30 minutes.

In a small bowl, combine sour cream and dry soup mix. Spread evenly over pork chops. Return to oven and bake 15 minutes. Serve hot.
