POSSUM PIE 
30 Ritz crackers, crushed
1 c. pecans, chopped
3 egg whites
1 c. sugar
1 tsp. vanilla
1 lg. Cool Whip
1 bag frozen coconut

Mix cracker crumbs and nuts. Beat egg whites, sugar and vanilla. Mix cracker mixture and egg whites mixture, and pour into greased pan or baking dish. Bake at 350 degrees. Let cool, pour Cool Whip on top, add coconut and refrigerate overnight.
