TEXAS STYLE CHILI 
2 lbs. beef, cubed
1 clove garlic, minced
1 (8 oz.) can tomato sauce
2 c. water
2 1/2 tsp. cumin
1 tsp. oregano
1 1/2 tsp. paprika
6 tbsp. chili powder
2 tbsp. minced dried onions
1 1/2 tsp. salt
1/2 to 3 tsp. cayenne
2 tbsp. masa flour

Cut beef into cubes the size of sugar cubes. Sear the meat along with the garlic. Add the tomato sauce and water. Add all of the other ingredients except the masa.
