SKILLET TURKEY HASH 
1 tsp. vegetable oil
1 tsp. butter
1/4 lb. ground turkey
1 c. diced onions
1 c. sliced mushrooms
1/2 c. diced green bell pepper
1/2 c. drained canned Italian tomatoes, chopped
1/2 tsp. oregano leaves
1/2 tsp. salt
1/2 tsp. pepper
1/2 sm. garlic clove, minced
2 eggs
1 oz. cheddar cheese, shredded

In 8 inch skillet that has an oven safe or removable handle heat oil and butter together until butter is bubbly and mixture is hot; add turkey nd cook breaking up large pieces of turkey until turkey is crumbly and no longer pink, 3-4 minutes. Add onions, mushrooms, bell pepper, tomatoes, seasonings, and garlic and cook until vegetables are soft, about 5 minutes. Remove skillet from heat. Preheat oven to 400 degrees; make 2 indentations in turkey mixture. Break 1 egg into each indentation being careful not to break the yolk. Sprinkle cheese over all and bake until cheese is melted and eggs are set, about 5 minutes. Makes 2 servings, 320 calories each.
