CORN CHOWDER 
2 tbsp. butter
1 1/2 c. raw potatoes, peeled & diced
1 c. diced onion
1/8 tsp. salt
Pepper to taste
2 tbsp. flour
2 c. chicken broth
2 c. corn niblets
1 c. light cream

Melt the butter in a pan. Add potatoes and onions and cook for about 1 minute. Add salt and pepper and continue cooking for 5 minutes or until tender. Add the flour, stirring thoroughly, form a smooth paste. Cook for 2 minutes, stirring continuously. Add the chicken broth and corn. Bring to a low boil and add the cream. Simmer for 5 minutes or more. Ready to serve but even better the next day!
