SOUTHERN BUTTERMILK BISCUITS 
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. melted fat
1 c. shortening
3/4 c. buttermilk
1 tsp. salt

Sift flour, salt, soda and baking powder together in mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Make a depression in the center of the dry ingredients and add buttermilk all at once. Mix lightly with a fork to make a soft dough. Toss and knead dough on lightly floured board until smooth.

Pat out or roll dough 1/2 inch thick and cut with a floured biscuit cutter. Place on greased baking sheet; brush lightly with melted fat and bake in hot oven, 450 degrees, for 12-15 minutes. Makes 15 medium biscuits.
