CUBE STEAK RYE SANDWICHES 
1 - 1 1/2 lbs. beef cube steaks (4 med.)
1/4 tsp. cracked pepper
2-3 tsp. oil
4 tbsp. oil
2 slices tomatoes
8 slices rye bread with caraway seeds
1 lg. red onion, thinly sliced
1/2 c. grated Parmesan cheese

Sprinkle steaks with pepper. Brown steaks in 4 tablespoons oil and butter, about 4 minutes on each side. While steaks are cooking, drizzle about 1 teaspoon oil on each bread slice. Broil lightly, turn and top with onion slices. Drizzle with more oil and broil until lightly browned. Sprinkle with cheese and broil a few seconds more. Place steaks on bread and onion, add slice of tomato and top with slice of bread with onion on top. Serves 4.
