CUBE STEAK RYE SANDWICH 
1 to 1 1/2 lbs. beef cube steaks (4 med.)
Cracked pepper
2 to 3 tsp. oil
1 tbsp. butter
8 slices rye bread with caraway seeds
4 tbsp. oil
1 lg. red onion, thinly sliced
1/2 c. grated Parmesan cheese

1. Sprinkle the steaks with cracked pepper, using from 1/4 to 1/2 teaspoon depending on your taste preference.

2. Heat the oil and butter in heavy skillet.

3. Brown the steaks quickly about 4 minutes per side.

4. While steaks are cooking, drizzle about 1 teaspoon oil on each bread slice. Broil lightly. Turn and top with onion slices.

5. Drizzle with more oil. Broil until lightly browned. Sprinkle with cheese. Broil for a few seconds.

6. Place the steaks on 4 slices of bread. Top with remaining slices, this time onion-side up. Serve.
