CARROT HONEY DATE MUFFINS 
1/4 c. butter
1/2 c. honey
1/2 c. milk
2 eggs
1 tbsp. finely grated orange peel
1 c. all-purpose flour
1 tbsp. baking powder
1 tsp. salt
1 c. grated carrots
1 c. diced, pitted dates

Heat oven to 425 degrees. Grease muffin cups. Melt butter with honey. Remove from heat and stir in milk, then eggs, then orange peel. Blend well and set aside. In a bowl, combine dry ingredients and mix well. Stir in butter mixture; mix well, then stir in carrot and dates. Spoon into muffin tin and bake 15 to 20 minutes or until a toothpick inserted into center comes out clean. Let stand 5 minutes before removing from pan. Serve warm. 1 dozen regular size.
