CALLALOO WEST INDIAN/AMERICAN STYLE | |
1 (16 oz.) pkg. frozen spinach leaves, chopped or whole 1 pkg. or 10 achroes, cut up, removing tips (okra) 1/4 lb. salt beef (optional) 2 or 3 med. crabs (optional) 1/4 lb. pumpkin, diced SEASONING: 1 clove garlic, chopped 1 med. onion, chopped 2 blades scallion, chopped 1/4 tsp. thyme, chopped 1 whole hot pepper, preferably yellow or red or pepper sauce to taste 3 tbsp. coconut milk and/or 2 tbsp. evaporated milk Salt to taste 1/2 tbsp. vegetable oil Soak beef before. Cook meat well in separate pot. Scald crabs and scrub well removing back and hairs. Boil in separate pot for about 20 minutes. Place spinach ochroes, pumpkin in saucepan and bring to boil with coconut milk, vegetable oil and seasonings added. Place pepper on top, don't allow pepper to burst. Could be removed after 10 minutes of cooking. Cook for about 1/2 hour in 1 cup water adding what little water remained after boiling salt beef and/or crabs. Let cool and blend for 1 minute. Add salt beef and crabs to dish just before serving. |
