ZUCCHINI CASSEROLE 
1 c. zucchini, sliced thin
1 c. onion, sliced thin
2 oz. cooked ground turkey
1 oz. ricotta cheese
1 oz. mozzarella cheese

In saucepan: 1/2 tsp. parsley flakes 1/4 tsp. onion salt 1/4 tsp. garlic salt

Add first 3 ingredients. Cook until tender. Place 1/2 in casserole, dot with ricotta. Add other 1/2, top with mozzarella. Place in oven until cheese melts. Makes 1 serving = 4 protein - meat exchanges.
