ZUCCHINI PIZZA CASSEROLE 
4 c. shredded, unpeeled zucchini
1/2 tsp. salt
2 eggs
1/2 c. grated Parmesan cheese
1 c. grated Cheddar cheese, divided
1 lb. ground turkey
1 c. chopped onion
15 oz. tomato sauce
1/4 tsp. oregano
1/4 tsp. basil
1 med. green pepper, chopped
Chopped mushrooms

Place zucchini in strainer; sprinkle with salt. Let drain for 10 minutes. Squeeze out moisture. Combine zucchini with eggs, Parmesan cheese and 1/2 of the Cheddar and mozzarella cheeses. Press into greased 9 x 13 inch pan. Bake at 400 degrees for 20 minutes.

Meanwhile, brown meat and onions. Drain and add tomato sauce and spices. Spoon over zucchini mixture. Top with remaining cheeses and sprinkle with green pepper and mushrooms. Bake 20 minutes more.
