QUICK AND DELICIOUS CAESAR SALAD
DRESSING
 
1/3 c. olive oil
Squirt of lemon (this is dependent on your personal taste)
1 tbsp. Worcestershire sauce
3 tbsp. vinegar
1 egg yolk
1-2 cloves garlice (dependent on personal taste)
1 tsp. dry mustard or Dijon mustard
1/3 c. Parmesan cheese

(I have used vegetable oil when I have run out of olive oil and it has worked fine).

Combine all ingredients and mix well. This can be done by hand or in a blender-food processor. Pour over 1 head of romaine lettuce and toss well. Add bacon bits, croutons and additional Parmesan cheese.

Serves four nicely. It is great with garlic bread and white wine as a great lunch or can be used as a salad with pasta dishes such as spaghetti or lasagna.
