CHEESY CHICKEN AND RICE 
2/3 c. celery slices
1/2 c. chopped onion
2 tsp. butter
2 tsp. flour
2 c. chopped tomato
2 c. chopped cooked chicken
1/2 lb. Velveeta cheese
4 c. cooked white rice

Cook celery and onion in butter; blend in flour. Add tomato, chicken, and cheese. Stir until cheese is melted. Serve over rice. Serves 4.
