CHEESY CHICKEN & RICE CASSEROLE 
1 can (5 oz.) chunk chicken
1 can chicken & rice soup
Salt & pepper to taste
1 can cream of chicken soup
1 1/2 c. grated cheddar cheese
2 c. cooked rice
1/2 c. Ritz cracker crumbs

Mix chicken, soups and rice in greased casserole dish. Bake at 350 degrees for 15 minutes. Take out and top with cheese and cracker crumbs. Place back in oven for 10 minutes.

Very quick and easy to make. I would recommend getting a bigger can of chicken or getting 2-5 oz cans.

Great recipe. Added a can of mixed vegetables that included potatoes, carrots, peas, green beans and corn to get some vegetables in there. Also, changed the can of chicken to 2 small boiled, chopped boneless chicken breasts. Very quick and easy.
