DAVE'S CHEESY TUNA AND RICE
CASSEROLE
 
2 c. cooked rice
1 c. shredded cheddar cheese
1 (6-1/2 oz.) can of tuna, drained and flaked
1 tbsp. onion, finely chopped
1 tbsp. parsley flakes
1 tsp. season-all salt
2 eggs, beaten
2 tbsp. milk

Lightly grease 8 x 8 casserole dish. Combine rice, cheese, tuna, onion, parsley, and season-all salt. Stir in eggs and milk. Mix thoroughly.

Pour into casserole dish, and bake at 375°F for 15 to 20 minutes, or until set and slightly browned on top. Serve with tangy butter sauce.

My husband really enjoyed it. I substituted the parsley with fresh basil from my garden and used normal salt. I also doubled the recipe and had to bake for approximately 40 minutes for it to set.

I think the onion needs to be sauteed or maybe I'll just try a dash of onion powder next time. Also 3/4 tsp salt is enough for us. This is so easy! Bake with fried onions on top!
