SHRIMP ROYAL 
1 lb. shrimp (fresh or frozen)
2 c. rice, uncooked
2 tbsp. butter
1 pod hot pepper, if desired
1 med. onion
1/2 bell pepper
1 c. celery
1 can mushrooms
2 c. milk
1/2 lb. sharp cheese
2 tsp. cornstarch

Boil shrimp. Cook rice in salted water. Saute in butter; peppers, onion and celery. Add mushrooms. Make a cheese sauce of milk, cheese and cornstarch. Mix shrimp in saute sauce. Add cheese sauce. Just before serving, add rice.
