EASY COCOA CAKE 
1 1/2 c. flour
1 c. sugar
1/2 c. cocoa
3/4 tsp. salt
1 tsp. baking soda
1 c. buttermilk or sour milk
1/2 c. oil
1 egg
1 tsp. vanilla
1/2 c. boiling water

Have all ingredients at room temperature. Sift dry ingredients into a bowl. Add buttermilk or sour milk, oil and egg and vanilla. Beat until blended, 1/2 minute. Add boiling water, beat 1/2 minute. Pour into square pan; bake in slow 325 degree oven for 15 minutes. Increase temperature to 350 degrees, bake 15 minutes longer. Cool and ice with brown sugar icing.
