SCALLOPED POTATOES 
3 (12 oz.) pkgs. hash browns, cubed or shredded
1 sm. carton sour cream
2 tbsp. melted butter
1/2 tsp. pepper
Approximately 1 c. milk
1 can cream of chicken soup
1/2 c. chopped onion
1 tsp. salt
10 oz. American cheese, grated

Mix all together; put in greased casserole. Top with crushed crackers, bread crumbs or corn flakes. Bake at 350 degrees until brown. Fresh Irish potatoes can be used, thin sliced or cubed and slightly pre-cooked. Some of the cheese can be reserved and sprinkled on top.
