FRENCH VEGETABLES 
2 lg. onions, diced
4 bell peppers, diced
3 bell peppers, diced
1 egg plant, diced
Thyme, oregano, 1 tbsp. each
6 slices Swiss or Mozzarella cheese
3 lg. zucchini, diced
4 slices bacon, diced
1 clove garlic, diced
Quart tomatoes
Bay leaf
2 tsp. oil

Brown onions, garlic, and bacon in oil. Add seasonings and vegetables, simmer 30 minutes, until tender. Arrange into 2 layers in large casserole dish topping each layer with cheese. Bake 350 degrees for 30 minutes.
