HOMEMADE ICE CREAM (1 1/2
GALLONS)
 
3 qt. milk
3 c. sugar
1 can sweetened condensed milk
4 eggs, beaten
4 junket tablets
3/4 tbsp. vanilla

Pour milk into pan and heat to lukewarm. Combine the sugar, condensed milk, eggs, junket and vanilla; and pour into warm milk. Let stand until thick. Pour into ice cream freezer. Freeze according to manufacturer's directions. Yield 1 1/2 gallons.

I made this ice cream according to these instructions, despite the fact that the junket instructions for their recipe call to set the junket tablet in a little water to break it up and let it dissolve.

I strongly recommend using the Junket instruction and use the water before adding the Junket tablet to the mixture. Not using water before adding may result in the tablet not dissolving properly and thus not getting the right thickness desired.

This recipe is the absolute best ever! I was looking for what I grew up with and this is definitely it! Make sure you crush your Junket tablets and you won't have anything to worry about. No need to dissolve them in water if you have them crushed. Also, I cut back on the sugar. 2 1/4 cups is plenty. May even go down to 2 cups and I don't think you'd be missing anything. This is very rich and less sugar is better.
