HOMINY CASSEROLE 
2 (15 1/2 oz.) cans hominy (drained)
1 can cream of chicken soup
1 stick butter
1 c. grated Cheddar cheese
1 c. chopped onion
Black pepper to taste
1 1/2 - 2 jalapeno peppers, chopped

Saute onions in butter. Mix all the other ingredients together. Save 1/4 cup cheese for the topping. Bake 30 minutes in 350 degree oven.
