GAZPACHO SOUP | |
1 large can diced tomatoes 3 cucumbers, peeled, chopped and seeded 1 medium red onion, chopped 1 bell pepper, chopped 1 yellow or red pepper, chopped 1 can pitted black olives, chopped Juice of two lemons 1/4 - 1/2 c. olive oil 1 tbsp. worcestershire sauce 1 - 2 cloves garlic, chopped 4 tbsp. chopped parsley 1 c. ice cubes Salt and pepper Mix all ingredients. Start out with 1/4 c. olive oil, then add more if needed. Salt and pepper to taste. Add enough ice cubes so that when they melt the soup is not too watery. Chill and serve. |
