PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
8 1/4 oz. drained pineapple
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg

In large bowl, beat eggs. Add oil, sugar and vanilla. Stir in zucchini and pineapple. In separate bowl, stir together flour and rest of ingredients. Stir into zucchini mixture. Bake in 350 degree oven for 1 hour, or until wooden toothpick inserted in center comes out clean. Makes 2 large or 4 small loaves.
