GREEK EGGPLANT 
2 lg. peppers
2 lg. onions
1/2 can tomato paste or 1 can tomatoes
1 tsp. parsley
1 tsp. salt
2 tsp. sugar
3 cloves garlic
1 c. water
2 eggplants

Cut up and fry the peppers and onions in oil. Add the tomato paste or the tomatoes, the parsley, salt, sugar, garlic, and water. Simmer the sauce. Slice the eggplant in thin slices and fry in oil.

In a casserole put sauce in the bottom. Then layer it alternately eggplant, sauce, eggplant, sauce, etc. Bake at 350 degrees for 1/2 hour.
