DIABETIC CAKE 
2 1/2 c. water
2 1/2 c. raisins
2 c. unsweetened applesauce
3 c. self rising flour
3 eggs
1 1/2 c. cooking oil
2 tbsp. Sweet & Low
3 tsp. cinnamon
1/4 tsp. baking soda
2 tbsp. vanilla

Cook raisins in water until the water is boiled away. Add applesauce, oil, eggs and Sweet and Low; mix well. Blend in flour, soda, cinnamon and vanilla, mixing well. Pour into a well greased and floured bundt pan and cook at 350 degrees for about 35 minutes or until done.
