SWEET-SOUR CHICKEN 
1 broiler chicken, cut up (3 to 4 lbs.)
3/4 stick butter
2 (8 oz.) cans chunk pineapple
1/4 c. brown sugar, packed
2 tbsp. cornstarch
1/2 tsp. salt
1/4 c. vinegar
1 tbsp. soy sauce
1 c. green pepper strips
1/4 c. thinly sliced onion

Brown chicken in skillet in butter. Cover and simmer for 35 to 40 minutes; remove and set aside. Drain pineapple; reserve juice. combine cornstarch, sugar and salt in skillet. Gradually stir in vinegar, soy sauce, and juice. Cook over medium heat, stirring constantly until thickened. Add pineapple, onion slices and green pepper. Pour over chicken. Simmer 5-10 minutes. Serve with steamed rice.
