SWEET POTATO CASSEROLE | |
2 (40 oz.) cans sweet potatoes or yams, drained and mashed 3 eggs, lightly beaten 2 sticks softened butter 1 c. brown sugar 1 c. granulated sugar 1/2 tsp. cinnamon 1/4 tsp. nutmeg or cloves 1 c. Grape-Nuts cereal 1 c. chopped pecans 1 1/2 c. miniature marshmallows Preheat oven to 350°F. Lightly grease a 9 x 13-inch casserole dish. Put mashed potatoes in dish. Beat eggs lightly; add butter, brown sugar, granulated sugar, cinnamon, nutmeg or cloves and cereal. Pour over potatoes. Bake at 350°F for 30 minutes. Stir and cut egg mixture into potatoes. Bake 30 minutes more. Top with chopped pecans and marshmallows. Broil until lightly browned. Serves 8 to 10. |
