CLAM CHOWDER 
3 strips bacon
1 diced onion
8 oz. clam juice
3 c. milk
1/4 c. butter
3 c. diced raw potatoes
2 or 3 (8 oz.) cans minced or chopped clams with juice
Pepper

Fry slowly 3 strips bacon. Remove and cook diced onion in fat until soft. Add 8 oz. clam juice, 3 cups diced raw potatoes, pepper. Cover and cook 15 minutes. Add canned clams with juice. Stir. Cook uncovered 10 minutes. Add 3 cups milk (or 14 1/2 oz. evaporated milk plus 1 can water). Can thicken with small amount cornstarch if desired. Add butter, salt and pepper to taste. Heat to desired serving temperature.
