FRESH APPLE/PEAR CAKE 
4 c. fresh apples or pears, peeled and diced
2 c. sugar
1 c. pecans, chopped
3 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 c. vegetable oil
1 tsp. vanilla
2 eggs, well beaten

In a large mixing bowl, combine the apples, sugar, and nuts. Set aside for 1 hour, stirring every so often so it makes its own juice. In a separate bowl sift the flour, cinnamon, salt and soda. Using a large wooden spoon, stir in the dry ingredients, oil, vanilla, and eggs. DO NOT USE AN ELECTRIC MIXER. Pour the batter into a greased and floured bundt pan. Bake at 350 degrees for 1 hour and 15 minutes.
