1 lg. can Libby's pumpkin pie mix (brown label Libby's) or 3 c. pumpkin puree and the following spices: 1 c. sugar 2 tsp. cinnamon 1 tsp. ginger 1/2 tsp. cloves 1/2 tsp. salt 1 lg. can evaporated milk 1 yellow cake mix 1 cube butter, melted 1 c. walnuts, chopped 2 eggs Water Beat eggs slightly. Add the pumpkin and mix with eggs. Measure 2 cups evaporated milk, make up the difference with water. Mix milk and pumpkin mixtures together. Grease 9 x 13 inch pan. Pour pumpkin mixture into pan. Crumble the dry cake mix on top of pumpkin filling. Then drizzle melted butter over cake. Sprinkle with nuts. Bake at 350 degrees for about 1 hour and 10 minutes. It is done when a knife inserted comes out clean. To serve: Top each serving with whipped cream and sprinkle with nutmeg. Note: For 1/2 recipe, use small can of milk and bake in 8 inch square pan for about 50 minutes. |
