CRISPY BEER BATTER 
1 c. flour
1 heaping tsp. baking powder
1 tsp. salt
1/2 tsp. pepper
1 tbsp. sugar
1-2 tbsp. cornmeal (optional)
1 egg, beaten
1 tbsp. cooking oil
Cold beer
Fresh fish

Combine all ingredients in bowl except beer and fish. Gradually add enough beer, starting with about 1/2 cup, to make mixture the consistency of thick pancake mixture. Dip fish in batter and fry in hot oil until brown and puffy on both sides.

NOTE: This batter also is excellent for frying uncooked shrimp, onion rings or uncooked zucchini squash, cut in 1/4 inch slices.
