TORTELLENI 
1 lb. ground chuck
2 eggs
Nutmeg to taste
2 c. grated cheese
Salt & pepper
1 tbsp. butter

DOUGH:

6 eggs
1 tsp. Mazola oil
1/2 c. water
5 c. flour

Cook meat with 1 tablespoon butter until it isn't red. Drain off juice, then add top ingredients.

DOUGH: Mix together. Knead for a while. Cover with dish cloth so it won't dry out. Roll out part of dough. Cut in 1 1/2 inch strips x 1 1/2 inch (1 1/2 x 1 1/2 inch squares). Fill with small ball of meat. Fold like a 3 corner diaper, seal dough by pressing together. Fold points together and pinch. Cook in chicken broth or this is the way I make them.

Cook beef or chicken in water.

1 lg. onion
4 stalks celery
4 carrots
Salt & pepper to taste

Remove meat, remove vegetables. I always leave carrots (the kids eat them). Cook your tortellini's until done, about 1/2 hour.
